This is a Perfect summer dish with all the fresh zucchini.
- one large zucchini
- 1 jar of spaghetti sauce
- 1 LG onion
- 6 mushrooms
- carton of cottage cheese
- fresh basil and orgeno
- other sumer veggies
- Cheese for layer and top
Slice zucchini in long 1/8 in thick slices. If you use it fresh note it will add alot of water to the dish and it can tend to be soupy. I see that other recipes call forthe zuchinni to be fried first and then dried as much as possible.
Once you have the zucchine perpared layer the first layer in the bottom of a 9 x 13 pan. Then add your favorite sauce, with any vegtables(mushroom and onion work welland othe summer squash) plus fresh basil and oregano. add layer of cottage cheese and parmesan cheese. Add three layer to the dish and end with cheese on top.
Bake for 90 minutes at 350
